Saffron Brown Rice Pilaf
Serves 4

2 Tbs. olive oil

2 shallots, minced

½ tsp. turmeric

½ tsp. saffron

2 cups brown rice

5 cups vegetable stock

2 clove garlic, minced

¼ cup chopped fresh flat-leaf parsley

6 green onions, thinly sliced

  1. Heat oil in large saucepan over medium heat. Add shallot, and sauté until tender. Add turmeric and saffron. Continue cooking until olive oil and shallots become bright yellow. Add rice, and stir until rice is glossy and coated with oil. Season with salt and pepper.
  2. Add stock and garlic. Cover with tight fitting lid, and cook 40 minutes. Remove from heat, and let stand 10 minutes. Fluff rice with fork, add parsley and green onions, and serve.
