Green Tea & Ginger Ice Cream
11/3 cup almond milk
1 large avocado, peeled and pitted
1 Tbs. matcha green tea powder
1 Tbs. finely minced ginger
Honey or stevia to taste
- Combine almond milk, avocado, green tea, and ginger in blender. Purée until thick and creamy. Taste, and add sweetener, if needed.
- Transfer to ice cream maker, and process according to manufacturer’s instructions. Divide among individual dishes, and serve immediately.

Makes 4 fudgesicles
1 avocado, peeled and pitted
1 cup coconut milk
1/4 cup raw agave, plus more to taste
3 Tbs. raw cacao powder (or regular cocoa powder)
- Halve avocado, remove pit, and scoop flesh into food processor. Add coconut milk, agave, and cacao powder, and purée until smooth. Taste, and add additional agave if needed. Transfer mixture to popsicle, tray, and insert sticks. Freeze 4—6 hours, or overnight.
- Remove pops from freezer 1—2 minutes before serving. Unmold carefully, and serve.
