Looking for a healthier way to celebrate Cinco de Mayo this year? You’re not alone. The holiday, which began as a commemoration of the Mexican army’s May 5, 1862 victory over France at the Battle of Puebla during the Franco-Mexican War, is now a much bigger celebration in the United States than it is in Mexico. Probably because this celebration of all things Mexico is also the perfect excuse for a pre-summer bash.
Unfortunately, the typical May 5th menu, replete with fried tortillas, fatty sauces, and cheese-heavy dishes, is the healthy eater’s worst nightmare—and the timing is especially tragic, falling as it does so close to swimsuit season.
But it doesn’t have to be that way. This year, enjoy a healthier Cinco de Mayo with these spa-inspired recipes that swap vegetables for rice and chips, up the fiber, and slash fat and calories—all without sacrificing the flavor. That’s really something to celebrate!
