Looking for a healthier way to celebrate Cinco de Mayo this year? You’re not alone. The holiday, which began as a commemoration of  the Mexican army’s May 5, 1862 victory over France at the Battle of Puebla during the Franco-Mexican War, is now a much bigger celebration in the United States than it is in Mexico. Probably because this celebration of all things Mexico is also the perfect excuse for a pre-summer bash.

Unfortunately, the typical May 5th menu, replete with fried tortillas, fatty sauces, and cheese-heavy dishes, is the healthy eater’s worst nightmare—and the timing is especially tragic, falling as it does so close to swimsuit season.
