5 Things to Do with … Goji Berries

Tart and sweet, with a chewy texture and a pleasing, mildly bitter aftertaste, goji berries are one of our favorite superfoods. Native to China and Tibet, these little fruits have long been used in traditional herbal medicine, and for good reason: They’re rich in polysaccharides, beta carotene, zeaxanthin, and other compounds that protect against cancer, enhance immunity, and reduce the risk of skin cancer and age-related blindness. You’ll find them dried, in juices and powders, and fresh in some locations. Add more to your life with these simple ideas:

  1. Purée ⅓ cup dried goji berries, 1 can organic coconut milk, and ⅓ cup unrefined cane sugar, just until small flecks of goji berries remain. Process in an ice cream maker, and top with shredded coconut or minced crystallized ginger.
  2. Add 2 Tbs. goji berry powder to
    1 cup brewed, sweetened green tea, and freeze in ice cube trays. (Add 3 goji berries to each compartment in the ice cube tray for added visual appeal.)
  3. Blend ¼ cup goji berry powder with
    1 cup peach or apricot nectar. Combine in a pitcher with 1 liter sparkling water and garnish with fresh mint.
  4. Combine 1 cup coconut milk, 1 cup almond milk, ⅓ cup honey, ¼ cup chia seeds, and ¼ cup dried goji berries in a medium bowl. Refrigerate until thickened, and serve.
  5. Toss ¼ cup each dried goji berries, dried blueberries, chopped almonds, and pumpkin seeds with 2 diced pears. Let stand for 1 hour before serving.
