All-American GoodPop Berry Granita Parfaits GoodPop Hibiscus Mint bars add a gourmet touch to this lovely summer dessert, made with Greek yogurt, honey, and fresh strawberries.
- Serves 4Servings
6 GoodPop Hibiscus Mint bars, removed from sticks & cut into chunks
1 cup fresh strawberries, hulled & sliced
1 cup fresh blueberries
2 tsp. fresh Meyer lemon juice
2 Tbs. honey
4 Tbs. vanilla non-fat Greek yogurt, stirred
4 tall, narrow glasses, chilled in the freezer
Mint sprigs, for garnish
- Combine strawberries, blueberries, lemon juice, and honey in medium bowl, and stir lightly. In food processor, pulse GoodPop bars briefly to produce thick slush.
- Layer GoodPop slush and berry mixture alternately in chilled glasses to make two layers each; top each with 1 Tbs. yogurt, garnish with mint sprigs, and serve immediately.
