Grapefruit Salad with Pistachios & Crumbled Goat Cheese Recipe

  • Dressing:
  • 3 Tbs. fresh ruby red grapefruit juice
  • 2 Tbs. olive oil
  • 1 Tbs. white wine vinegar
  • 1 Tbs. honey
  • 1 tsp. minced grapefruit zest
  • Salt to taste
  • Salad:
  • 3 ruby red grapefruit, peeled and sliced
  • 1/4 cup chopped salted pistachios
  • 1/4 cup crumbled goat cheese
  • Torn fresh mint leaves


  1. Whisk together grapefruit juice, olive oil, vinegar, honey, and grapefruit zest, and season with salt.
  2. Layer grapefruit slices on a platter, and drizzle with dressing. Sprinkle pistachios, goat cheese, and mint over grapefruit, then season with salt.
