Raw Chocolate-Raspberry Mousse

Ingredients
- 2 small avocados
- 1/3 cup honey
- 1 tsp. vanilla extract
- 1/3 cup cocoa powder
- 3 Tbs. melted coconut oil
- 1/8 tsp. salt
- 1 pint fresh raspberries
Preparation
- Halve avocados, remove pits, and scoop flesh into blender. Add honey, vanilla, and salt; process until smooth.
- Add cocoa powder and coconut oil, and process again until smooth and creamy. To serve, spoon into martini glasses or dessert bowls, top with raspberries, and serve immediately. May also be made up to 4 hours in advance.
