As with all grilling, you’re better off with low heat. Don’t fall into the high flame trap-it causes carcinogens to form on the meat being grilled. And cover any protein you grill with a marinade. Studies have shown that spice-rich marinades are loaded with protective antioxidants and anti-inflammatory compounds that make grilled meats better for you!
1¼ lbs. lean ground bison (or ground beef, sirloin, or turkey)
¾ tsp. each salt and cracked black pepper
½ tsp. cayenne pepper, optional for more kick
2 Tbs. hot sauce
4 oz. crumbled blue cheese
4 large lettuce leaves
4 thin slices avocado
1 cup finely grated carrots
1 cup finely chopped celery

- Preheat a grill or grill pan to just under medium-high heat. In large bowl, combine ground meat, salt, pepper, cayenne, if using, and hot sauce, and mix gently. Form 8 thin, even patties, and indent each one in center with your thumb.
- Spoon equal amounts of blue cheese into center dent of 4 patties, and top with remaining patties. Pinch the edges together to seal tightly, forming 4 stuffed burgers.
- Cook burgers on preheated grill, 3-5 minutes per side, or to desired doneness (or on a grill pan for 4-8 minutes per side).
- Place each cooked burger into center of one lettuce leaf and top with one slice of avocado and equal amounts of carrots and celery.
