1. Steam broccoli on stovetop or in microwave 3 minutes, until bright green. Allow to cool slightly.
2. In food processor, process steamed broccoli into fine crumbs. Tip broccoli crumbs into medium bowl with eggs, breadcrumbs, and Parmesan, and stir well.
3. Using spoon, form mixture into 16 balls. Heat half of oil in frying pan over medium heat. Add half of bites to pan, and press tops gently to flatten slightly. Cook 2–3 minutes per side until golden. Move to paper towel and repeat with remaining oil and bites. Store leftovers in airtight container in fridge for up to 3 days.
