*Vadouvan Spice Mix is essentially a curry powder blended with spices popular in French cooking, such as grated shallots.
3 Tbs. olive oil
1 medium yellow onion, peeled & chopped
2 tsp. Whole Spice Vadouvan Spice Mix*
1 quart organic chicken broth
2 cups water
1 cup red lentils
2 carrots, peeled and chopped
2 EPIC Smoked Maple Salmon bars, shredded with box grater
2 Tbs. Meyer lemon juice
Salt & pepper to taste
- In large pot, heat olive oil over medium-low heat, add onion, and sauté until translucent, about 4 minutes. Add Vadouvan spice and cook, stirring, 2 minutes more.
- Add broth, water, lentils, carrots, and shredded salmon bars. Heat to simmer, and cook until lentils are firm-soft but not mushy, about 20 minutes.
- Remove 2 cups of soup, purée in food processor, and return to pot. Stir in lemon juice, and add salt and pepper to taste.
