Superfood Kale Salad

This is the salad that converted me to loving salads!

Garlic Kale Salad: Add 2 tsp. garlic powder or minced garlic.

Kale Wraps: Wrap salad in brown rice wrapper for portability.

Ingredients

  • 1 bunch kale, ribs and stems removed   

  • 1 avocado   

  • 1 Tbs. apple cider vinegar   

  • 11/2 Tbs. flaxseed oil   

  • ¾ tsp. salt   

  • ¼ cup nutritional yeast   

  • 5 Tbs. sunflower seeds   

Preparation

Tear kale leaves into small pieces, and place in a large bowl.

Using your fingers, massage avocado into kale to coat.

Add remaining ingredients, and stir (or continue to massage mixture with your fingers) until well combined.
